Ingredients
  

  • 2 cup all purpose floor
  • 1 ½ cups granulated sugar
  • teaspoons baking soda
  • tablespoon cinnamon
  • 1  teaspoon salt
  • 3  large eggs
  • 2  cups grated zucchini about 2 small
  • ¾  cup vegetable oil
  • tablespoon vanilla
  • 1 ½  cups walnuts chopped, or pecans

Instructions
 

  • Preheat the oven to 350˚F. Grease two 8×4-inch loaf pans or line with parchment paper.
  • In a medium bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt. Set aside.
  • In a large bowl, beat the eggs, then mix in the grated zucchini, oil, and vanilla until well combined.
  • Fold the dry ingredients and walnuts into the zucchini mixture, stirring gently until just combined.
  • Divide the batter evenly among the prepared pans and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pans for 5 minutes, then transfer to a wire rack to cool completely.

Notes

This recipe is written for 8×4-inch loaf pans; do not use 9×5-inch pans. Grate the zucchini on the larger holes of a box grater. There is no need to peel the zucchini unless the skin is extra-thick. If using extra-large garden zucchinis, scoop out some of the seeds with a spoon if desired. Do not wring out excess moisture from the grated zucchini – its moisture is an asset in this bread.
