No-Bake Chocolate Peanut Butter Protein Balls

This simple recipe for no-bake  chocolate peanut butter protein balls requires just four ingredients. With a rich, fudgy peanut butter center and a coating of sugar-free chocolate, these quick 5-minute fat bombs make a perfect healthy dessert or protein-packed snack. There’s even a peanut-free option! Paleo, Vegan, and Gluten-Free.

Ingredients:

  • 2 cups smooth peanut butter (see notes)
  • 3/4 cup coconut flour
  • 1/2 cup sticky sweetener of choice (see notes)
  • 2 cups sugar-free chocolate chips (see notes)

Instructions:

  1. Line a large plate or tray with parchment paper and set aside.
  2. In a mixing bowl, combine the peanut butter, coconut flour, and sweetener. Mix until well combined. If the mixture is too thick and crumbly, add a small amount of water or milk until it forms a thick, workable batter.
  3. Roll the mixture into small balls and place them on the lined plate or tray. Freeze for 10 minutes.
  4. While the balls are freezing, melt the sugar-free chocolate chips. Once the peanut butter balls are firm, use two forks to dip each ball into the melted chocolate, coating them completely. Repeat until all the balls are covered.
  5. Refrigerate for 20 minutes, or until the chocolate coating is firm.

Notes:

    • You can substitute the peanut butter with any smooth nut or seed butter of your choice.
  •  I used monk fruit sweetened maple syrup. For a paleo/vegan sweetener, you can use maple syrup, agave nectar, or honey (note that honey is not strictly vegan).
  • For a non-keto version, you can use any chocolate chips you prefer.

Storage: These keto chocolate peanut butter balls can be kept at room temperature for up to 5 days, but they’re best refrigerated. They are also freezer-friendly.
