1 cup finely chopped fresh cheddar cheese, and 1 cup grated fresh cheddar cheese
12 small flour tortillas 6 Inches
Optional: Lettuce that has been torn to smal pieces, olives cut into circles, grape tomatoes that are cut into two and avocado sliced.
Directions
Preheat oven to 375°. Then in a large bowl mix the beans, salsa, rice, and 1 cup of the cheese. Spoon about 1/3 cup mixture off-center on each tortilla. Draw up the ends and sides over the filling and roll up. -
- Arrange burritos in a greased 13×9-in. baking dish. Sprinkle with remaining 1 cup cheese. Cover and bake until heated through, 20-25 minutes. Add toppings as desired.
