Tortillas (3 Ingredients!)

These tortillas are made with almond flour and feature a soft, pliable texture with just three main ingredients—no yeast or eggs required! Ideal for sandwiches, quesadillas, pizzas, and more.

Ingredients

  • 2 cups almond flour
  • 6 tablespoons psyllium husks (not psyllium husk powder—see notes)
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup warm water (not boiling—see notes)

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine almond flour, psyllium husks, and salt. Mix thoroughly.
  2. Add Wet Ingredients: Gradually add olive oil and warm water to the dry ingredients, stirring until fully combined. Let the mixture sit for 1 minute.
  3. Knead Dough: Gently knead the dough several times until it forms a ball. Place the dough on a lightly floured surface.
  4. Shape Tortillas: Divide the dough into 4 large or 8 small pieces. Take one piece and place it between two sheets of parchment paper. Roll out the dough with a rolling pin until thin and flat. Use a large dinner plate or a small appetizer plate to trace around the edges and shape the tortilla.
  5. Cook Tortillas: Heat a non-stick pan over medium heat and lightly grease it. Place a tortilla in the pan and cook for 2-3 minutes until it starts to brown. Flip and cook for an additional 2 minutes. Repeat with the remaining dough pieces.

Notes

  • Psyllium Husk: Use whole psyllium husks, not the powdered form.
  • Water: Use warm tap water, not hot.

Storing: Keep leftover tortillas in the refrigerator, wrapped in a paper towel and plastic wrap. The paper towel helps keep them soft and prevents them from drying out. They will stay fresh for up to 5 days. Allow them to reach room temperature for 30 minutes before using.

Freezing: Freeze leftover tortillas in a ziplock bag for up to 2 months. Thaw at room temperature or in the refrigerator overnight.
