  • 2  reen bell peppers, seeds and ribs removed, thinly sliced
  • 2 red bell peppers, seeds and ribs removed, thinly sliced
  • 1 large yellow onion, slicedKosher salt
  • 1 1/2 lb. sirloin steak, thinly sliced
  • 8  slices provolone
  • 4 hoagie rolls

Instructions
 

  • STEP 1
    In a large skillet, heat 1 tablespoon of the oil over medium heat. Add the bell peppers and onions, sprinkling with a pinch of salt. Cook, stirring often until the vegetables are caramelized, about 12 to 15 minutes. Remove the peppers and onions onto a plate and set aside.
  • STEP 2
    In same skillet, heat remaining tablespoon oil over medium-high. Cook the steak, turning occasionally, to desired level of doneness, 5 minutes. Season with salt and pepper to taste.
