Monkey Butter Recipe
Ingredients:
4 large ripe bananas
1 cup shredded coconut fresh or frozen, either with no sugar added or with sugar, according to your taste
1/2 cup granulated sugar
Light brown sugar: ¼ cup packed and Dark brown sugar : ¼ cup packed
1/4 cup unsalted butter
1 tablespoon lemon juice
Other 1/2 teaspoon ground cinnamon (optional)
1/4 teaspoon salt

Scoop the bananas and mash them until they are smooth and you get a paste like consistency. You can use a fork or a potato masher for this.”
Cook the Bananas:
To the remaining two tablespoons of butter in a large skillet, add heat and melt it on the medium intensity. After the butter has been melted add the mashed bananas.
Stir the bananas from time to time for 5 minutes or so until the bananas start sticking to the pan.
Add Sugars and Spices:
Mix in the granulated sugar, brown sugar, salt and cinnamon (if you chose to include it). Stir and sauté for an additional 5 minutes. The blend will begin to caramelize and/or paste and so on.
Incorporate Coconut and Lemon Juice:Incorporate Coconut and Lemon Juice:
Turn off the heat, then fold in the shredded coconut and lemon juice. Stir to blend all the ingredients together till well incorporated.
Stir for another 5-10 minutes continuing to cook the sauce. It is required to obtain a mass, the consistency of which must be something between a jam and a paste.
Cool and Store:
It will only take few minutes for the monkey butter to thicken to one’s preference, after which the skillet should be taken off the flame. It is okay to cool it to room temperature though.
Scoop the monkey butter into a clean jar or other storage container, using a spoon. It can be kept in fridge for about one and half to two weeks at most.
Tips:
Texture: Because the monkey butter is a more coarse and textured sauce you can pureed the sauce for one to two minutes with an immersion blender before cooling.
Adjust Sweetness: Taste and adjust the sweetness as needed – it is common for a perfectly delicious soup to be ruined by an excess of sugar. You can add more sugar if you wish to make the spread less bitter.
Savor your monkey butter on toast, pancake, waffles or you can use it as topping for yogurt and desserts.
