Ingredients
  

  • 14 ounces 72% dark chocolate finely chopped
  • 8 large egg yolks
  • 1/2 cup (99g) granulated sugar
  • 4 cups (908ml) heavy cream divided (steps 3,4,and,6)
  • 1 Tablespoon vanilla extract
  • 2  teaspoons espresso powder optional
  • 1/2  teaspoon salt

For the Whipped Cream Topping:

  • 1 and 1/2 cups (340ml) heavy cream
  • 1/2 cup (57g) confectioners' sugar

Instructions
 

  • Place the chopped chocolate in a heatproof bowl and set aside.
  • In a large bowl, using a handheld electric mixer, beat the egg yolks and granulated sugar until thick, smooth, and deeply yellow on medium-high speed. Set aside.
  • n a medium saucepan, heat 2 cups (454ml) of the cream over medium heat until it starts to simmer. Pull off the heat and whisk half of the hot cream gradually into the egg yolk mixture to temper it, whisking in a steady stream.
  • Add the remaining 1/2 cup (113ml) of cream to the bowl and whisk to combine. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture thickens enough to just coat the back of a spoon, about 5 minutes. Never let it boil.
  • Pour the warm mixture over the chopped chocolate; stir until smooth and melted. Whisk in vanilla, espresso powder, and salt. Cover with plastic wrap; refrigerate until chilled, about 1 to 2 hours.
  • Once the chocolate mixture has chilled, take the remaining 1 1/2 cups of heavy cream, and whip with an electric mixer until it becomes stiff peaks.
