This cheesy keto garlic bread, made with mozzarella dough, is a must-have for your low-carb recipe collection. With just 1.5g net carbs per slice, it’s a fantastic choice for anyone following a low-carb diet.

Ingredients:

  • 170g (1.75 cups) pre-shredded mozzarella cheese
  • 85g (0.75 cups) almond meal/flour* (see notes)
  • 2 tbsp full-fat cream cheese
  • 1 tbsp crushed garlic
  • 1 tbsp fresh or dried parsley
  • 1 tsp baking powder
  • A pinch of salt, to taste
  • 1 medium egg

Instructions:

  1. In a microwave-safe bowl, combine all the ingredients except the egg. Stir gently to mix.
  2. Microwave on HIGH for 1 minute. Stir, then microwave for an additional 30 seconds.
  3. Add the egg to the mixture and stir gently to form a cheesy dough.
  4. Transfer the dough to a baking tray and shape it into a garlic bread loaf. Slice the dough to create individual pieces.
  5. (Optional) Mix 2 tbsp melted butter with 1 tsp parsley and 1 tsp garlic. Brush this mixture over the top of the dough and sprinkle with additional cheese.
  6. Bake at 220°C (425°F) for 15 minutes, or until the bread is golden brown.

Notes:

  • UPDATE: Nutrition values are for each slice, with the recipe making 10 slices.
  • Substitution: You can replace the almond meal/flour with ¼ cup (4 tbsp) coconut flour if preferred.
