Ingredients

  • Two (3/4-pound) bone-in rib-eye steaks, at least 1-inch thick
  • 1 1/4 teaspoons Diamond Crystal kosher salt
  • 1/2 teaspoon freshly ground black pepper, or more to taste
  • 1 tablespoon neutral oil, such as canola or avocado oil
  • 2 tablespoons unsalted butter, optional

    Steps to Cook Your Steak

    1. Prepare Ingredients: Gather all necessary ingredients.
    2. Preheat Oven: Position a rack in the center of the oven and preheat to 350°F. Allow the steaks to come to room temperature for 20 to 40 minutes before cooking.
    3. Season Steaks: Just before cooking, season the steaks with salt and pepper.
    4. Heat Pan: Add oil to a cast-iron pan and heat it over medium-high heat until the oil shimmers.
    5. Sear Steaks: Place the steaks in the hot pan and sear one side for 3 to 4 minutes. Flip and sear the other side for another 3 to 4 minutes.
    6. Check Temperature: Use an instant-read thermometer to check the internal temperature. Depending on the steak’s thickness and your preferred level of doneness, the steaks might be cooked to your liking.

      • Rare: 110°F
      • Medium-Rare: 120°F
      • Medium: 130°F
      • Medium-Well: 140°F
      • Well-Done: 150°F
    7. Finish Cooking (if needed): If the steaks aren’t done to your liking, place a tablespoon of butter on top of each steak. Transfer the pan to the oven and cook for an additional 3 to 5 minutes, or until the desired doneness is achieved.
    8. Rest Steaks: Transfer the steaks to a cutting board and let them rest for at least 5 minutes before slicing and serving.
